So ugh im reading one piece maybe havent read a few of the last chapters,and i know her devil fruit power is age manipulation but it kinda seems like shes sucking their souls or something?

Big Mom's power actually is that she manipulates souls. Jewelry Bonney is the one who manipulates age.
