Assuming you're asking this question out of genuine ignorance, it's because these types of doujins are a huuuuuge pain to redraw and typeset
Thin dialogue bubbles, floating text(dialogue without a text bubble) on most pages and the page count are the biggest hurdles
If someone's not personally invested or not getting paid, they'll probably avoid a series that requires a whole lot of work to make it look good
Unless you don't care about quality like G*gak Ir*ng or B*ne /shrug
