Chloroform takes like 5 mins to work. If you want to knock someone out fast you're forced to choke them. That can put you out as a light in as little as 7 seconds. Furthermore, if done right your target will panic the moment you start pressing.

I've tested it out myself, although not to completion since it was on a friend and vice versa, him on me. You wouldn't pass out for several minutes, but instead for less than 30 seconds, or as little as 10 secs.
