If I need to guess, angels have more androgynous because in their line of work they don't need to deal with anything sexual so many unnecessary curves are liability. Practically polar opposite of succubus trope. You know, definition of purity in name of THE God. If you need more professional explanation it is more in line of "the author like that design and keep with it".
