Because the prospect of a submissive sex slave can be kinda boring in the long run, at least when they're a more passive party as is often the case in these setups. If you think about it, it would essentially become a sort of long-term committed relationship, which not everyone is so enthusiastic about. Often the premise is the dude training them enjoys the process of corruption more than the girl herself, and once one she is "spent" they want to move on to other things and eventually other girls. It's the equivalent to being a playboy, except instead of girlfriends it's sex slaves. It's not that hard to visualize, aside from the sort of absurd hubris and capability they'd need to have. But that's par for the course in most netorare/break hentai anyway. Or of course they could just be very sexually liberal, which again, isn't too much of a stretch for someone with these sorts of interests to begin with.

Plus, ultimately they're not so much the "protag" in the story, or at least they're rarely fleshed out to that extent. The focus is more on the girl's fall from grace, the dude is usually a supporting role, if not just a plot mechanism.
It's not my favorite premise, but I at least understand it in theory. Really you're just doing the classic "I don't like thing so why does it exist????" without really bothering to try to understand it at all or accept differences in preference.
